  • 1 lb fresh large shrimp, peeled and deveined
  • 1 cup frozen peas (no need to thaw)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth (warmed)
  • 1 cup grated fresh Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • ½ cup dry white wine
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat until shimmering. Add the chopped onion; sauté until translucent.
  2. Stir in minced garlic and Arborio rice; cook for about 2 minutes until the rice begins to turn slightly translucent.
  3. Pour in white wine and stir until mostly absorbed.
  4. Gradually add warm broth one ladle at a time, stirring frequently until fully absorbed before adding more. Continue for about 18-20 minutes until creamy.
  5. When the risotto is al dente, stir in frozen peas and shrimp. Cook until the shrimp turns pink and everything is well combined.
  6. Remove from heat; fold in grated Parmesan cheese, salt, and pepper to taste. Garnish with parsley if desired.
