  • 1 lb shrimp, peeled and deveined
  • 8 soft corn tortillas
  • 1 large ripe mango, diced
  • 1 small red onion, finely chopped
  • 2 tbsp fresh lime juice
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp extra-virgin olive oil
  • ½ tsp cumin
  • ½ tsp paprika
  • Salt to taste

Instructions

  1. Prep your ingredients by dicing the mango and onion and rinsing the cilantro.
  2. In a bowl, marinate the shrimp with olive oil, cumin, paprika, salt, and lime juice for about 15 minutes.
  3. Heat a skillet over medium-high heat and sauté the marinated shrimp for 3-4 minutes until pink and opaque.
