Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 oz egg noodles
- 2 tsp Szechuan peppercorns
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 3 tbsp low-sodium soy sauce
- 2 tbsp chili oil (adjust for spice)
- 2 green onions, chopped
- 2 tbsp vegetable oil (canola or peanut)
- 1 tbsp toasted sesame seeds
Instructions
- Prepare all ingredients by rinsing the shrimp under cold water and patting dry. Chop garlic, ginger, and green onions, setting aside in separate bowls.
- Cook egg noodles in a large pot of salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
- In a skillet over medium-high heat, warm the vegetable oil. Add minced garlic and ginger; sauté until fragrant for about 30 seconds. Add shrimp and cook until pink and opaque.
- Stir in soy sauce and chili oil; mix well before adding the cooked noodles along with reserved pasta water to loosen.
