  • 1 lb large shrimp, peeled and deveined
  • 8 oz egg noodles
  • 2 tsp Szechuan peppercorns
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp chili oil (adjust for spice)
  • 2 green onions, chopped
  • 2 tbsp vegetable oil (canola or peanut)
  • 1 tbsp toasted sesame seeds

Instructions

  1. Prepare all ingredients by rinsing the shrimp under cold water and patting dry. Chop garlic, ginger, and green onions, setting aside in separate bowls.
  2. Cook egg noodles in a large pot of salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
  3. In a skillet over medium-high heat, warm the vegetable oil. Add minced garlic and ginger; sauté until fragrant for about 30 seconds. Add shrimp and cook until pink and opaque.
  4. Stir in soy sauce and chili oil; mix well before adding the cooked noodles along with reserved pasta water to loosen.
  5. Gently fold everything together until well-coated with sauce. Sprinkle Szechuan peppercorns and green onions while mixing.
  6. Serve immediately on plates or bowls topped with toasted sesame seeds.
