  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach and cook until wilted (about 2 minutes). Remove from heat and mix in feta cheese.
  3. Flatten each chicken breast to an even thickness using a meat mallet. Season both sides with salt, pepper, and paprika.
  4. Spoon the spinach-feta mixture onto one end of each chicken breast and roll tightly, securing with toothpicks if needed.
  5. Place the rollups seam-side down in the prepared baking dish and bake for 25-30 minutes or until they reach an internal temperature of 165°F (75°C).
