  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 4 cups fresh baby spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and finely chop garlic and sun-dried tomatoes.
  2. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides (about 6–7 minutes per side). Remove from pan.
  3. In the same skillet, sauté garlic and sun-dried tomatoes until fragrant (about 1 minute).
  4. Add heavy cream to the skillet, scraping up any bits on the bottom. Let simmer for 3–4 minutes until slightly thickened.
  5. Stir in fresh spinach and grated Parmesan cheese until melted. Return chicken to the skillet; mix well.
  6. Serve over pasta or alongside crusty bread, garnished with additional Parmesan if desired.
