- 1 cup heavy cream

- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients and finely chop garlic and sun-dried tomatoes.
- Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides (about 6–7 minutes per side). Remove from pan.
- In the same skillet, sauté garlic and sun-dried tomatoes until fragrant (about 1 minute).
- Add heavy cream to the skillet, scraping up any bits on the bottom. Let simmer for 3–4 minutes until slightly thickened.
- Stir in fresh spinach and grated Parmesan cheese until melted. Return chicken to the skillet; mix well.
- Serve over pasta or alongside crusty bread, garnished with additional Parmesan if desired.
