  • 1 cup fresh spinach, chopped
  • 1 cup asparagus, chopped
  • 1 cup bell peppers (red or yellow), finely chopped
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup cheese (feta or Gruyere), crumbled or shredded
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp nutmeg

Instructions

  1. Preheat oven to 375°F (190°C). Roll out the pie crust and fit it into a pie dish; prick the bottom with a fork.
  2. In a skillet over medium heat, add olive oil and sauté chopped asparagus and bell peppers until softened (about 5 minutes).
  3. Stir in fresh spinach until wilted; season with salt, pepper, and nutmeg. Remove from heat.
  4. In a mixing bowl, whisk together eggs and heavy cream until well blended.
  5. Spread sautéed vegetables evenly in the pie crust; pour the egg mixture over the top.
  6. Bake for 35-40 minutes until golden brown and set in the center. Allow to cool slightly before slicing.
