- 6 oz Spanish chorizo sausage, sliced
- 1 medium red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- ¼ cup fresh parsley, chopped
- Juice of 1 lemon (about 2 tbsp)
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste

- In a large skillet over medium heat, cook chorizo until browned and crispy (about 5-7 minutes).
