Ingredients

  • 1 lb sirloin or ribeye steak
  • 2 medium sweet potatoes (about 2 cups cubed)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, cutting them into bite-sized cubes. Slice the bell peppers into strips.
  3. Cut the steak into bite-sized pieces. In a bowl, toss the steak with olive oil, garlic powder, salt, and pepper.
  4. In a baking dish, toss sweet potato cubes with olive oil, salt, and pepper. Roast for 15 minutes.
  5. After 15 minutes, add the bell peppers and seasoned steak bites to the dish. Roast for another 10-15 minutes until everything is cooked through.
