- 1 lb sirloin or ribeye steak
- 2 medium sweet potatoes (about 2 cups cubed)
- 1 red bell pepper
- 1 yellow bell pepper
- 3 tbsp extra virgin olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, cutting them into bite-sized cubes. Slice the bell peppers into strips.
- Cut the steak into bite-sized pieces. In a bowl, toss the steak with olive oil, garlic powder, salt, and pepper.
- In a baking dish, toss sweet potato cubes with olive oil, salt, and pepper. Roast for 15 minutes.
- After 15 minutes, add the bell peppers and seasoned steak bites to the dish. Roast for another 10-15 minutes until everything is cooked through.
