Ingredients

  • 1/2 cup sago pearls
  • 2 cups water (for cooking sago)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup granulated sugar (adjust based on strawberry sweetness)
  • 2 cups fresh strawberries, chopped

Instructions

  1. Rinse sago pearls under cold water until clear. In a saucepan, bring 2 cups of water to a boil. Add the sago and cook for 10-15 minutes until transparent, stirring occasionally.
  2. Drain the sago in a fine mesh strainer and rinse under cold water to remove excess starch.
  3. In another saucepan, combine coconut milk with sugar over low heat, stirring until dissolved; do not boil.
  4. Mix chopped strawberries with a little sugar in a bowl and set aside.
  5. Layer cooked sago in serving bowls, pour warm coconut sauce over it, and top with macerated strawberries.
  6. Chill in the fridge for at least one hour before serving.
