  • 1 cup apple cider (fresh-pressed preferred)
  • 5 cloves garlic (minced)
  • 6 sprigs fresh thyme (or 1 tsp dried thyme)
  • 1 large onion (sliced into rings)
  • 2 tbsp brown sugar
  • Salt & pepper (to taste)

Instructions

  1. Preheat oven to 350°F (175°C) and spray a roasting pan with nonstick spray.
  2. Rub the pork loin generously with salt and pepper, then coat it with minced garlic.
  3. Arrange onion rings around the pork in the pan.
  4. In a bowl, mix apple cider and brown sugar, then pour over the pork roast.
