Ingredients

  • 250g halloumi cheese
  • 1 cup bell peppers, thinly sliced
  • 1 cup cucumber, julienned
  • 1 cup fresh spinach
  • 4 tbsp sweet chili sauce
  • 4 large tortillas (flour or whole wheat)
  • 2 tbsp lime juice
  • 2 tsp olive oil

Instructions

  1. Prepare your ingredients by washing and slicing the bell peppers and cucumber into thin strips.
  2. Heat olive oil in a skillet over medium heat. Add halloumi slices and cook until golden brown on both sides (about 3-4 minutes).
  3. Lay out each tortilla, spread sweet chili sauce, then layer with halloumi and fresh veggies.
  4. Drizzle lime juice over the filling.
  5. Fold in the sides of the tortilla and roll tightly from the bottom up.
  6. Slice each wrap diagonally and serve with extra sweet chili sauce for dipping.
