Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 6 cups mixed salad greens
  • 1 medium cucumber, thinly sliced
  • 1 red bell pepper, sliced
  • 1 cup shredded carrots
  • ½ cup fresh cilantro, chopped
  • ¼ cup freshly squeezed lime juice
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • 1 tsp Sriracha (optional)

Instructions

  1. Season chicken breasts with salt and pepper. Grill or pan-sear over medium heat for about 6 minutes on each side until cooked through (internal temp reaches 165°F). Let rest before slicing.
  2. While chicken rests, chop the salad greens into bite-sized pieces and slice the cucumber and bell pepper. Grate the carrots if using whole ones. Combine all veggies in a large bowl.
  3. In a small bowl, whisk together lime juice, fish sauce, sugar, and Sriracha (if using).
  4. Slice the rested chicken into strips and add to the vegetable mix. Drizzle dressing over the top and toss gently until everything is well-coated.
  5. Serve immediately garnished with additional cilantro if desired.
