- 4 boneless, skinless chicken breasts (about 1 lb)
- 6 cups mixed salad greens
- 1 medium cucumber, thinly sliced
- 1 red bell pepper, sliced
- 1 cup shredded carrots
- ½ cup fresh cilantro, chopped
- ¼ cup freshly squeezed lime juice
- 2 tbsp fish sauce
- 1 tsp sugar
- 1 tsp Sriracha (optional)
Instructions
- Season chicken breasts with salt and pepper. Grill or pan-sear over medium heat for about 6 minutes on each side until cooked through (internal temp reaches 165°F). Let rest before slicing.
- While chicken rests, chop the salad greens into bite-sized pieces and slice the cucumber and bell pepper. Grate the carrots if using whole ones. Combine all veggies in a large bowl.
- In a small bowl, whisk together lime juice, fish sauce, sugar, and Sriracha (if using).
- Slice the rested chicken into strips and add to the vegetable mix. Drizzle dressing over the top and toss gently until everything is well-coated.
- Serve immediately garnished with additional cilantro if desired.
