- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup bell peppers, thinly sliced
- 1 cup shredded carrots
- 1/2 cup fresh cilantro, chopped
- 1/2 cup creamy natural peanut butter
- 3 tbsp fresh lime juice
- 2 tbsp low-sodium soy sauce
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
- Chili flakes (optional)
Instructions
- Grill or pan-sear the chicken breasts over medium heat for 6-7 minutes per side until cooked through. Allow to rest before slicing.
- In a bowl, whisk together peanut butter, lime juice, soy sauce, honey or maple syrup, sesame oil, and chili flakes.
- In a large mixing bowl, combine bell peppers, carrots, and cilantro.
- Add sliced chicken and drizzle the dressing over the salad. Toss gently until well-coated.
