  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup bell peppers, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup creamy natural peanut butter
  • 3 tbsp fresh lime juice
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • Chili flakes (optional)

Instructions

  1. Grill or pan-sear the chicken breasts over medium heat for 6-7 minutes per side until cooked through. Allow to rest before slicing.
  2. In a bowl, whisk together peanut butter, lime juice, soy sauce, honey or maple syrup, sesame oil, and chili flakes.
  3. In a large mixing bowl, combine bell peppers, carrots, and cilantro.
  4. Add sliced chicken and drizzle the dressing over the salad. Toss gently until well-coated.
  5. Serve immediately, garnished with extra cilantro or crushed peanuts if desired.
