Ingredients
- 1 cup short-grain sushi rice
- 1 cup water
- 8 oz fresh salmon fillet
- 1 tbsp olive oil
- ½ cucumber (sliced)
- 1 avocado (sliced)
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp toasted sesame seeds
- 2 green onions (chopped)
- Seaweed sheets (Nori), cut into strips
Instructions
- Rinse the sushi rice under cold water until clear. Combine with water in a saucepan, bring to a boil, cover, and reduce heat. Cook for 18 minutes.
- While the rice cooks, heat olive oil in a pan over medium-high heat. Season salmon with salt and pepper and cook skin-side down for about 5 minutes. Flip and cook for another 3-4 minutes until golden brown.
- Prepare cucumber and avocado slices while the salmon cooks.
- In a small bowl, whisk together soy sauce and rice vinegar.
- Assemble by layering warm rice at the bottom of your bowl, topping it with salmon, cucumber, and avocado slices.
