Ingredients

  • 1 cup short-grain sushi rice
  • 1 cup water
  • 8 oz fresh salmon fillet
  • 1 tbsp olive oil
  • ½ cucumber (sliced)
  • 1 avocado (sliced)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame seeds
  • 2 green onions (chopped)
  • Seaweed sheets (Nori), cut into strips

Instructions

  1. Rinse the sushi rice under cold water until clear. Combine with water in a saucepan, bring to a boil, cover, and reduce heat. Cook for 18 minutes.
  2. While the rice cooks, heat olive oil in a pan over medium-high heat. Season salmon with salt and pepper and cook skin-side down for about 5 minutes. Flip and cook for another 3-4 minutes until golden brown.
  3. Prepare cucumber and avocado slices while the salmon cooks.
  4. In a small bowl, whisk together soy sauce and rice vinegar.
  5. Assemble by layering warm rice at the bottom of your bowl, topping it with salmon, cucumber, and avocado slices.
  6. Drizzle dressing over the top, sprinkle sesame seeds and green onions, and add seaweed strips.
