- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions until al dente (about 3-5 minutes). Drain and rinse under cold water.
- While the tortellini cools, chop the cherry tomatoes, cucumbers, bell peppers, and red onion into bite-sized pieces.
- In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
