Ingredients

  • 1 block firm tofu (14 oz)
  • 1 red bell pepper, cut into squares
  • 1 yellow bell pepper, cut into squares
  • 1 medium zucchini, sliced into thick rounds
  • 1 medium red onion, cut into wedges
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • Bamboo or metal skewers

Instructions

  1. Press the tofu between paper towels to remove excess moisture; then cut it into cubes.
  2. Whisk together soy sauce, maple syrup, sesame oil, garlic powder, and a dash of black pepper in a bowl.
  3. Combine tofu and veggies in a resealable bag or bowl; pour marinade over them and let sit for at least 30 minutes.
  4. Thread marinated tofu and veggies onto soaked skewers.
  5. Preheat grill to medium-high heat and grill skewers for 10-15 minutes, turning occasionally until charred.
  6. Serve garnished with sesame seeds or chopped green onions.
