- 1 block firm tofu (14 oz)
- 1 red bell pepper, cut into squares
- 1 yellow bell pepper, cut into squares
- 1 medium zucchini, sliced into thick rounds
- 1 medium red onion, cut into wedges
- 3 tbsp low-sodium soy sauce
- 2 tbsp maple syrup
- 1 tbsp sesame oil
- 1 tsp garlic powder
- Bamboo or metal skewers
Instructions
- Press the tofu between paper towels to remove excess moisture; then cut it into cubes.
- Whisk together soy sauce, maple syrup, sesame oil, garlic powder, and a dash of black pepper in a bowl.
- Combine tofu and veggies in a resealable bag or bowl; pour marinade over them and let sit for at least 30 minutes.
- Thread marinated tofu and veggies onto soaked skewers.
- Preheat grill to medium-high heat and grill skewers for 10-15 minutes, turning occasionally until charred.
- Serve garnished with sesame seeds or chopped green onions.
