  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced sweet onions
  • 1 cup fresh spinach
  • 1 cup shredded Monterey Jack and Cheddar cheese blend
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced onions until translucent, then add bell peppers and cook until tender.
  2. Add fresh spinach to the skillet along with beaten eggs mixed with cumin and chili powder. Cook until eggs are fluffy.
