  • 46 bone-in, skin-on chicken thighs (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp honey

Instructions

  1. In a bowl, whisk together olive oil, garlic powder, smoked paprika, lemon juice, honey, salt, and black pepper to create the marinade.
  2. Place chicken thighs in a resealable bag or bowl and pour half of the marinade over them. Coat evenly and refrigerate for at least one hour, preferably overnight.
  3. Preheat your grill to medium-high heat (400°F/200°C).
  4. Remove chicken from the marinade (discard leftover marinade) and place skin-side down on the grill.
  5. Grill for about 7-8 minutes until grill marks appear; then flip and cook another 7-8 minutes until internal temperature reaches 165°F (75°C).
  6. Let rest for five minutes before serving with your favorite sides.
