Ingredients

  • 1 cup cherry tomatoes
  • 1 cup cucumber (diced)
  • 1 cup feta cheese (cubed)
  • 1/2 cup red onion (sliced)
  • 1/2 cup Kalamata olives (pitted)
  • 2 tbsp fresh oregano or basil (chopped)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash cherry tomatoes and cucumbers thoroughly; cut cucumbers into bite-sized pieces.
  2. Thread ingredients onto skewers in this order: cherry tomatoes, cucumber, feta cubes, red onion slices, and Kalamata olives.
  3. Tuck in sprigs of fresh herbs between layers for added flavor.
  4. Drizzle assembled skewers with olive oil and squeeze lemon juice over the top.
  5. Season with salt and pepper just before serving.
