Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Season diced chicken with salt and pepper; sauté until golden brown, about 5-7 minutes.
  2. Add minced garlic and cook until fragrant, about 30 seconds.
  3. Pour in the chicken broth and scrape any browned bits from the bottom of the pot.
  4. Stir in fettuccine and heavy cream. Bring to a gentle simmer and cook for 10-12 minutes, stirring occasionally until pasta is tender.
  5. Remove from heat; stir in grated Parmesan cheese until melted and smooth. Adjust seasoning if needed.
