- 2 tbsp extra virgin olive oil
- 3 sprigs fresh thyme
- 3 sprigs fresh rosemary
- 4 garlic cloves, crushed
- 1 lemon, halved
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and drizzle with olive oil, then season generously with salt and pepper.
- Stuff the cavity with halved lemon, crushed garlic, and fresh herbs.
- Rub remaining olive oil and chopped herbs over the outside of the chicken.
- Place the chicken breast-side up on a roasting rack in a baking dish and roast for about 1 hour or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for about 15 minutes before carving.
