Description

Oven-Roasted Chicken is a mouthwatering dish that delivers tender, juicy meat with crispy skin, perfect for family dinners or special occasions.


Ingredients

  • 1 whole chicken (45 pounds)
  • 2 tbsp extra virgin olive oil
  • 3 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 4 garlic cloves, crushed
  • 1 lemon, halved
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and drizzle with olive oil, then season generously with salt and pepper.
  3. Stuff the cavity with halved lemon, crushed garlic, and fresh herbs.
  4. Rub remaining olive oil and chopped herbs over the outside of the chicken.
  5. Place the chicken breast-side up on a roasting rack in a baking dish and roast for about 1 hour or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for about 15 minutes before carving.
