  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup bell peppers, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 cups vegetable broth

Instructions

  1. In a large skillet over medium heat, add a splash of olive oil and sauté the diced onion and minced garlic until translucent (about 3 minutes).
  2. Add the diced bell peppers and corn; cook for another 5 minutes until softened.
  3. Stir in the rinsed quinoa, black beans, and diced tomatoes until well combined.
  4. Sprinkle cumin and chili powder over the mixture. Pour in vegetable broth and bring to a gentle boil before reducing heat.
  5. Cover the skillet and let it simmer on low for about 20 minutes or until quinoa absorbs all the liquid.
