- 1 cup full-fat coconut milk

- 2 tablespoons lime juice
- 2 tablespoons coconut rum (optional)
Instructions
- Blend together the pineapple, coconut milk, honey (or agave), lime juice, and optional rum until smooth.
- Taste the mixture and adjust sweetness if necessary.
- Pour the blended mixture into popsicle molds, leaving some space at the top.
- Insert sticks and freeze for at least 4 hours or until solid.
- To remove, run warm water over the outside of the mold for a few seconds and gently pull out the popsicles.
- Serve immediately or store in an airtight container in the freezer.
