Ingredients

  • 2 cups fresh pineapple chunks (about 1 medium pineapple)
  • 1 cup full-fat coconut milk
  • 2 tablespoons honey or agave syrup (adjust to taste)
  • 2 tablespoons lime juice
  • 2 tablespoons coconut rum (optional)

Instructions

  1. Blend together the pineapple, coconut milk, honey (or agave), lime juice, and optional rum until smooth.
  2. Taste the mixture and adjust sweetness if necessary.
  3. Pour the blended mixture into popsicle molds, leaving some space at the top.
  4. Insert sticks and freeze for at least 4 hours or until solid.
  5. To remove, run warm water over the outside of the mold for a few seconds and gently pull out the popsicles.
  6. Serve immediately or store in an airtight container in the freezer.
