- 3 green onions, sliced (reserve half for garnish)
- 3–5 dried red chilies (adjust to taste)
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar (or apple cider vinegar)
- 2 tbsp cornstarch
- 2 tbsp vegetable oil
- 1 tsp sugar (optional)
Instructions
- Prepare the ingredients: Dice the chicken, bell peppers, and slice the green onions.
- Marinate the chicken: In a bowl, mix chicken with soy sauce, rice vinegar, minced garlic, and cornstarch. Let it marinate for at least 15 minutes.
- Sauté chilies: Heat oil in a large skillet over medium-high heat. Add dried red chilies and sauté for about 30 seconds until fragrant.
- Cook chicken: Add marinated chicken to the skillet and cook until golden brown on all sides (about 5-7 minutes).
- Add veggies: Stir in bell peppers and half of the green onions; cook for another 3-4 minutes until slightly softened.
