  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cloves fresh garlic, minced
  • 1 cup bell peppers (mixed red and green), diced
  • 3 green onions, sliced (reserve half for garnish)
  • 35 dried red chilies (adjust to taste)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 tsp sugar (optional)

Instructions

  1. Prepare the ingredients: Dice the chicken, bell peppers, and slice the green onions.
  2. Marinate the chicken: In a bowl, mix chicken with soy sauce, rice vinegar, minced garlic, and cornstarch. Let it marinate for at least 15 minutes.
  3. Sauté chilies: Heat oil in a large skillet over medium-high heat. Add dried red chilies and sauté for about 30 seconds until fragrant.
  4. Cook chicken: Add marinated chicken to the skillet and cook until golden brown on all sides (about 5-7 minutes).
  5. Add veggies: Stir in bell peppers and half of the green onions; cook for another 3-4 minutes until slightly softened.
  6. Create sauce: In a small bowl, whisk together additional soy sauce, rice vinegar, and sugar (if using). Pour over chicken and veggies; stir until thickened.
  7. Serve hot over steamed rice or noodles.
