- 2 lbs bone-in chicken thighs
- 6 garlic cloves, crushed
- 1/2 cup low-sodium soy sauce
- 1/2 cup white vinegar
- 3 bay leaves
- 1 tsp black peppercorns
- 2 tbsp vegetable oil
- Water (as needed to cover chicken)
Instructions
- In a large bowl, combine soy sauce, vinegar, crushed garlic, bay leaves, and black peppercorns. Add chicken thighs and marinate for at least 30 minutes (preferably overnight).
- Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade (reserve liquid) and sear each piece until golden brown (about 4-5 minutes per side).
- Pour reserved marinade over the seared chicken and add enough water to partially submerge the chicken. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30-40 minutes until chicken is tender.
- Uncover and increase heat slightly to reduce the sauce until thickened to your preference.
- Serve hot over steamed rice or noodles with extra sauce drizzled on top.
