  • 2 lbs bone-in chicken thighs
  • 6 garlic cloves, crushed
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup white vinegar
  • 3 bay leaves
  • 1 tsp black peppercorns
  • 2 tbsp vegetable oil
  • Water (as needed to cover chicken)

Instructions

  1. In a large bowl, combine soy sauce, vinegar, crushed garlic, bay leaves, and black peppercorns. Add chicken thighs and marinate for at least 30 minutes (preferably overnight).
  2. Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade (reserve liquid) and sear each piece until golden brown (about 4-5 minutes per side).
  3. Pour reserved marinade over the seared chicken and add enough water to partially submerge the chicken. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 30-40 minutes until chicken is tender.
  5. Uncover and increase heat slightly to reduce the sauce until thickened to your preference.
  6. Serve hot over steamed rice or noodles with extra sauce drizzled on top.
