Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 3 tbsp unsalted butter
  • 1 cup low-sodium chicken broth
  • 1 cup dry white wine
  • 2 tbsp Dijon mustard
  • 1 tsp Herbs de Provence
  • 8 oz fresh mushrooms, sliced
  • 1 tsp crushed peppercorns
  • 2 lbs russet potatoes, peeled and cubed
  • ½ cup heavy cream
  • ¼ cup sour cream
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish

Instructions

  1. 1. Gather all ingredients. Chop garlic and slice mushrooms.
  2. 2. Heat butter in a large skillet over medium heat. Season chicken breasts with salt and pepper; sear until golden brown on both sides (about 6 minutes per side). Remove from skillet.
  3. 3. In the same skillet, sauté garlic and mushrooms until tender (about 5 minutes).
  4. 4. Deglaze the pan with white wine, scraping up browned bits. Stir in chicken broth and Dijon mustard.
  5. 5. Return chicken to the skillet along with herbs de Provence and crushed peppercorns. Cover and simmer on low heat for about 20 minutes until cooked through.
  6. 6. Meanwhile, boil cubed potatoes in salted water until fork-tender (15–20 minutes). Drain and return to pot.
  7. 7. Add heavy cream, sour cream, salt, and pepper to the potatoes; mash until creamy yet slightly chunky.
  8. 8. Serve chicken hot alongside a generous portion of garlic mashed potatoes, drizzled with extra sauce.
