  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, minced garlic, chopped parsley, crumbled feta cheese, lemon zest, salt, and pepper; mix until well combined.
  3. Form the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.

  5. While the meatballs are baking, cook the orzo in salted boiling water according to package instructions until al dente (about 8-10 minutes).
