  • 1 lb fresh or frozen octopus
  • 4 tbsp extra virgin olive oil (divided)
  • 2 tbsp freshly squeezed lemon juice
  • 2 cloves garlic (minced)
  • 1 tsp red pepper flakes
  • Salt and pepper (to taste)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh oregano (chopped)
  • 2 tbsp balsamic vinegar

Instructions

  1. Thaw octopus if frozen, rinse under cold water, and pat dry.
  2. Simmer octopus in salted water for about 45 minutes until fork-tender.
  3. In a bowl, mix 2 tbsp olive oil, lemon juice, garlic, red pepper flakes, salt, and pepper. Marinate octopus in this mixture for at least 30 minutes.
  4. Preheat grill to medium-high heat. Grill marinated octopus for 3-4 minutes on each side until charred.
  5. Blend remaining olive oil with chopped parsley and oregano to create the herb oil.
  6. Slice grilled octopus into bite-sized pieces and serve with herb oil.
