- 4–5 lbs prime rib roast
- 6 cloves fresh garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 1/4 cup extra virgin olive oil
- 2 tsp kosher salt
- 1 tsp black pepper
- 2 tbsp Dijon mustard
Instructions
- Preheat your oven to 450°F (232°C).
- Pat the prime rib dry with paper towels.
- In a bowl, mix garlic, rosemary, thyme, olive oil, salt, pepper, and mustard. Rub the mixture all over the roast.
- Place the seasoned rib in a roasting pan bone-side down and roast at high heat for 20 minutes for a crispy crust.
- Lower the temperature to 325°F (163°C) and continue cooking until the internal temperature reaches 130°F (54°C) for medium-rare (approximately 1.5 hours).
- Rest the prime rib covered loosely with foil for at least 20 minutes before slicing.
