Ingredients

  • 45 lbs prime rib roast
  • 6 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp Dijon mustard

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pat the prime rib dry with paper towels.
  3. In a bowl, mix garlic, rosemary, thyme, olive oil, salt, pepper, and mustard. Rub the mixture all over the roast.
  4. Place the seasoned rib in a roasting pan bone-side down and roast at high heat for 20 minutes for a crispy crust.
  5. Lower the temperature to 325°F (163°C) and continue cooking until the internal temperature reaches 130°F (54°C) for medium-rare (approximately 1.5 hours).
  6. Rest the prime rib covered loosely with foil for at least 20 minutes before slicing.
