  • 4 lbs pork shoulder
  • 10 cloves garlic, minced
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 2 tsp dried oregano
  • 2 tsp ground cumin
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste
  • 2 cups pork broth
  • 2 large onions, sliced
  • 3 bay leaves

Instructions

  1. In a bowl, mix minced garlic, orange juice, lime juice, olive oil, oregano, cumin, salt, and pepper. Coat the pork shoulder with the marinade in a resealable bag or dish. Refrigerate for at least 4 hours or overnight.
  2. Preheat your oven to 325°F (160°C).
  3. Heat olive oil in a skillet over medium-high heat. Sear each side of the marinated pork until golden brown (about 4–5 minutes per side).
  4. Place seared pork in a roasting pan with sliced onions and bay leaves.
  5. Pour enough broth to cover half of the pork shoulder. Cover tightly with foil and roast for about 3 hours or until fork-tender.
  6. Once cooked, let the pork rest before shredding. Strain pan juices into a saucepan over medium heat until slightly thickened for sauce.
  7. Shred the pork using two forks and drizzle with homemade sauce before serving.
