  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 bulb garlic, halved
  • 1 lemon, cut in half
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cups carrots, chopped (optional)
  • 2 cups potatoes, chopped (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. Rub olive oil over the chicken and season generously with salt, pepper, rosemary, and thyme.
  4. Stuff the cavity with lemon halves and garlic cloves for enhanced flavor.
