- 1 large yellow onion, chopped
- 8 oz fresh button mushrooms, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup full-fat sour cream
- 1 tbsp Dijon mustard
- 8 oz egg noodles
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Season the beef with salt and pepper. In a skillet over medium-high heat, sear the beef until browned on all sides (about 5-7 minutes).
- Add the chopped onions and mushrooms to the skillet; cook until onions are translucent (3-4 minutes).
- Stir in the minced garlic, then return the beef to the skillet. Add beef broth and Dijon mustard; bring to a simmer.
- Transfer everything into a slow cooker. Cook on low for 6-8 hours or high for 4 hours.
- Stir in sour cream before serving over cooked egg noodles and garnish with parsley.
