Description

Ingredients

  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1 large yellow onion, chopped
  • 8 oz fresh button mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 1 tbsp Dijon mustard
  • 8 oz egg noodles
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt and pepper. In a skillet over medium-high heat, sear the beef until browned on all sides (about 5-7 minutes).
  2. Add the chopped onions and mushrooms to the skillet; cook until onions are translucent (3-4 minutes).
  3. Stir in the minced garlic, then return the beef to the skillet. Add beef broth and Dijon mustard; bring to a simmer.
  4. Transfer everything into a slow cooker. Cook on low for 6-8 hours or high for 4 hours.
  5. Stir in sour cream before serving over cooked egg noodles and garnish with parsley.
