Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 tbsp olive oil
  • Salt, pepper, paprika, thyme to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil and sauté onions and garlic until fragrant.
  3. Season chicken breasts with salt, pepper, and paprika; brown them in the skillet for about 5-7 minutes per side.
  4. In a bowl, mix cream of mushroom soup with chicken broth until smooth. Pour over the browned chicken.
  5. Evenly scatter uncooked rice on top of the mixture and gently press down.
  6. Cover the skillet with aluminum foil and bake for 30-35 minutes until cooked through.
