- 1 cup long-grain white rice
- 1 medium onion, diced
- 4 garlic cloves, minced
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of mushroom soup
- 2 tbsp olive oil
- Salt, pepper, paprika, thyme to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add olive oil and sauté onions and garlic until fragrant.
- Season chicken breasts with salt, pepper, and paprika; brown them in the skillet for about 5-7 minutes per side.
- In a bowl, mix cream of mushroom soup with chicken broth until smooth. Pour over the browned chicken.
- Evenly scatter uncooked rice on top of the mixture and gently press down.
- Cover the skillet with aluminum foil and bake for 30-35 minutes until cooked through.
