Description

Strawberry Rhubarb Pie is a vibrant, tangy-sweet dessert that harmoniously blends fresh strawberries and rhubarb in a flaky crust—perfect for summer gatherings and creating delightful memories.

Ingredients

Scale
  • 2 cups fresh strawberries, sliced
  • 2 cups rhubarb stalks, diced
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter, cut into small pieces
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine sliced strawberries and diced rhubarb with sugar, flour, and lemon juice. Mix until well coated.
  3. Roll out the pie crust and fit it into a pie dish without stretching.
  4. Pour the fruit mixture into the prepared crust and dot with butter.
  5. Top with another crust or create a lattice design; seal edges and cut slits to let steam escape.
  6. Bake for 40-50 minutes until the crust is golden brown and filling bubbles slightly.
  7. Allow cooling on a wire rack before slicing.
