Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup beef broth (low-sodium)
  • 3 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • Salt, pepper, thyme to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, sauté diced onion until translucent. Add carrots and cook until slightly tender.
  3. Brown the ground beef or lamb in the skillet, breaking it up as it cooks.
  4. Stir in beef broth, salt, pepper, and thyme; simmer for 5 minutes.
  5. Mix in frozen peas just before assembling the casserole.
