Ingredients

  • 1 lb lean ground beef
  • 8 flour tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Sauté onions until translucent; add garlic and cook until fragrant.
  3. Add ground beef and cook until browned, breaking apart with a spatula. Drain excess fat if necessary.
  4. Season with cumin, chili powder, salt, and pepper; mix well.
  5. Spoon beef mixture onto each tortilla, roll tightly, and place seam-side down in a baking dish.
  6. Pour enchilada sauce over the tortillas and sprinkle shredded cheese on top.
  7. Bake for 20-25 minutes until cheese is bubbly and golden brown.
