- 3 boneless, skinless chicken breasts (1.5 lbs)
- 1/4 cup fresh lime juice
- 1 red bell pepper, thinly sliced
- 1 cucumber, sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup toasted peanuts
- 3 tbsp low-sodium soy sauce
- 1 tbsp fish sauce
- 1 tbsp honey or sugar
- 2 tsp sesame oil
Instructions
- 1. Grill or poach the chicken until cooked through (165°F). Allow to cool and shred into bite-sized pieces.
- 2. While cooling, slice the red bell pepper and cucumber into thin strips.
- 3. In a small bowl, whisk together lime juice, soy sauce, fish sauce, honey or sugar, and sesame oil until well combined.
- 4. In a large bowl, mix shredded chicken with chopped veggies and cilantro. Drizzle dressing over everything and toss gently to combine.
- 5. Just before serving, sprinkle toasted peanuts on top for added crunch.
