  • 2 large russet potatoes
  • 8 oz ribeye steak
  • 1 cup shredded sharp cheddar cheese
  • ½ cup crispy bacon bits
  • ½ cup sour cream
  • 2 tbsp chopped chives or green onions

Instructions

  1. Preheat oven to 400°F (200°C). Scrub the russet potatoes clean and poke holes in them with a fork.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until fork-tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium-high heat. Season the ribeye steak with salt and pepper before searing for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest before slicing.
  4. Once the potatoes are cooked, cut them open lengthwise and fluff the insides with a fork. Top with shredded cheddar cheese to allow it to melt.
  5. Add crispy bacon bits and dollops of sour cream, finishing with chopped chives or green onions.
  6. Serve immediately alongside sliced steak.
