Description

Tzatziki Chicken Salad is a light, zesty dish featuring grilled chicken, fresh vegetables, and a creamy tzatziki dressing that’s perfect for summer picnics or quick lunches.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, grated
  • 2 cloves fresh garlic, minced
  • Juice of 1 lemon
  • 2 tbsp fresh dill, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken with salt and pepper. Cook for 6-7 minutes per side until golden brown and cooked through. Let cool before chopping.
  2. In a bowl, combine Greek yogurt, grated cucumber (squeezed to remove excess moisture), minced garlic, lemon juice, chopped dill, olive oil, salt, and pepper. Mix until creamy.
  3. In a large bowl, toss mixed greens with chopped chicken and drizzle with tzatziki sauce until well coated.
  4. Serve immediately in bowls or plates garnished with extra dill or cucumber slices.
