  • 34 boneless, skinless chicken breasts
  • 2 cups chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, diced
  • 6 cups low-sodium chicken broth
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 cup whole milk
  • 4 tbsp melted butter

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Sauté chicken breasts until golden brown on both sides (about 5 minutes each). Remove and set aside.
  2. In the same pot, add onions, carrots, and celery; sauté until soft (approx. 5 minutes).
  3. Return chicken to the pot and pour in chicken broth. Season with salt, pepper, and desired spices; bring to a gentle boil.
  4. In a bowl, mix flour, baking powder, milk, salt, and melted butter until thick dough forms.
  5. Drop spoonfuls of dumpling mixture into simmering broth. Cover and cook for about 15 minutes without lifting the lid.
  6. Serve hot with plenty of broth over the dumplings.
