  • 1 lb sirloin steak (cubed)
  • 2 cups sharp cheddar cheese (shredded)
  • 4 medium Yukon Gold potatoes (sliced)
  • 1 large sweet onion (chopped)
  • 2 cups low-sodium beef broth
  • 2 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Wash and peel the potatoes if desired, then slice them into thin rounds. Chop the onion into small pieces.
  2. Layer half of the sliced potatoes at the bottom of a slow cooker. Top with half of the chopped onions.
  3. Add the cubed steak on top, seasoning generously with salt, pepper, garlic powder, and dried thyme.
  4. Sprinkle half of the shredded cheddar cheese over the steak layer. Repeat layering with remaining potatoes, onions, and steak.
  5. Pour in enough beef broth to barely cover everything (about 1 to 2 cups).
  6. Cook on low for 6 hours or high for 3 hours until everything is tender.
  7. Stir gently before serving and add any remaining cheddar cheese on top.
