Ingredients
Scale
- 4 large flour tortillas
- 8 oz flank or sirloin steak
- 4 large eggs
- 1 cup grated cheddar cheese
- ½ cup salsa (your favorite variety)
- 1 ripe avocado, sliced
- 2 green onions, chopped
- Cilantro (optional, for garnish)
Instructions
- Prepare your ingredients by chopping green onions and slicing the avocado. Grate the cheese.
- Heat a skillet over medium-high heat. Season the steak with salt and pepper and cook for about 4-5 minutes per side until browned. Let it rest before slicing.
- In the same skillet, reduce heat to medium-low. Whisk the eggs until frothy and pour into the skillet, stirring gently until just set.
- Lay each tortilla flat and layer with sliced steak, scrambled eggs, cheese, salsa, avocado, and green onions.
- Roll each tortilla tightly from one end to another and fold in the sides to secure the filling.
- Optional: Toast the burritos seam-side down in the skillet until golden brown on both sides.
