Instructions
- Preheat the oven to 400°F (200°C). Scrub the russet potatoes clean, wrap them in foil, and bake on the oven rack until tender (about 45-60 minutes).
- Once baked, cool slightly, peel off skins, and mash potatoes in a large bowl. Mix in sour cream, butter, salt, pepper, and half of the cheddar cheese until combined.
- Fold in half of the bacon bits and chopped green onions for added flavor.
- Grease a baking dish with non-stick spray or butter. Transfer the potato mixture to the dish.
- Top with remaining cheddar cheese and bacon bits. Bake at 350°F (175°C) for 25-30 minutes until golden brown and bubbly.
