Ingredients

  • 3 large Russet potatoes (about 2 lbs)
  • 1 cup sour cream (full-fat)
  • 1 ½ cups sharp cheddar cheese, shredded
  • 1 cup bacon bits
  • ¼ cup green onions, chopped
  • 4 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the russet potatoes clean, wrap them in foil, and bake on the oven rack until tender (about 45-60 minutes).
  2. Once baked, cool slightly, peel off skins, and mash potatoes in a large bowl. Mix in sour cream, butter, salt, pepper, and half of the cheddar cheese until combined.
  3. Fold in half of the bacon bits and chopped green onions for added flavor.
  4. Grease a baking dish with non-stick spray or butter. Transfer the potato mixture to the dish.
  5. Top with remaining cheddar cheese and bacon bits. Bake at 350°F (175°C) for 25-30 minutes until golden brown and bubbly.
  6. Let cool slightly before garnishing with more green onions and serve warm.
