  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (any color), diced

  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup freshly grated Parmesan cheese
  • 3/4 cup Italian dressing

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. While the pasta cools, chop cherry tomatoes, cucumber, bell peppers, and red onion.
