Ingredients
Scale
- 1 lb boneless skinless chicken thighs
- 2 stalks fresh lemongrass, minced
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tbsp freshly squeezed lime juice
- 2 tbsp honey (or agave for substitution)
Instructions
- In a bowl, whisk together minced lemongrass, garlic, ginger, soy sauce, lime juice, and honey to create the marinade.
- Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over them. Seal or cover tightly and refrigerate for at least 1 hour (or overnight for optimal flavor).
- Preheat your grill to medium-high heat (375°F) or your oven to 400°F. Line a baking sheet with parchment paper if baking.
- Remove the chicken from the marinade (discard leftover marinade) and place it on the grill or baking sheet. Grill each side for about 6-7 minutes or bake in the oven for approximately 20-25 minutes until cooked through.
- Let the chicken rest for 5 minutes before slicing or serving whole. Drizzle any remaining sauce over the top.
