  • 1 lb boneless skinless chicken thighs
  • 2 stalks fresh lemongrass, minced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp honey (or agave for substitution)

Instructions

  1. In a bowl, whisk together minced lemongrass, garlic, ginger, soy sauce, lime juice, and honey to create the marinade.
  2. Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over them. Seal or cover tightly and refrigerate for at least 1 hour (or overnight for optimal flavor).
  3. Preheat your grill to medium-high heat (375°F) or your oven to 400°F. Line a baking sheet with parchment paper if baking.
  4. Remove the chicken from the marinade (discard leftover marinade) and place it on the grill or baking sheet. Grill each side for about 6-7 minutes or bake in the oven for approximately 20-25 minutes until cooked through.
  5. Let the chicken rest for 5 minutes before slicing or serving whole. Drizzle any remaining sauce over the top.
