  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat coconut milk
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 tbsp grated fresh ginger
  • 1 tsp chili flakes (adjust to taste)
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp fish sauce

Instructions

  1. Trim excess fat from the chicken breasts and pat them dry.
  2. In a bowl, mix lime juice, ginger, garlic, and chili flakes. Marinate the chicken in this mixture for at least 30 minutes.
  3. Heat oil in a skillet over medium-high heat. Sear the marinated chicken for about 5 minutes on each side until golden brown and cooked through.
  4. Remove the chicken and add coconut milk and fish sauce to the skillet, scraping up browned bits. Stir to combine.
  5. Return the chicken to the skillet and simmer for 5 minutes until flavors meld.
  6. Garnish with cilantro before serving.
