Ingredients

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 2 cans hominy (15 oz each), drained
  • 1 jar green salsa (16 oz)
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup fresh cilantro, chopped (for garnish)
  • Juice of 2 limes
  • 1 avocado, sliced (for garnish)
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano

Instructions

  1. Sauté chopped onion in a skillet over medium heat for about 5 minutes until translucent.
  2. Add sautéed onions and chicken breasts to the crockpot.
  3. Pour in green salsa and chicken broth; stir to combine.
  4. Add drained hominy, cumin, and oregano; mix well.
  5. Cover and cook on low for 6–8 hours or high for 4 hours until chicken shreds easily.
  6. Serve with cilantro, avocado slices, lime wedges, and optional tortilla strips.
