- 4 large flour tortillas
- 2 cups shredded cheese (Monterey Jack and cheddar blend)
- 2 cups cooked chicken or black beans
- 1 cup bell peppers (sliced)
- 1 cup onion (sautéed)
- 2 tsp cumin
- 2 tsp chili powder
- Salt and pepper to taste
- 1 cup sour cream or Greek yogurt
- 1 cup pico de gallo or salsa
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté sliced onions and bell peppers until soft.
- In a bowl, combine shredded chicken (or beans), sautéed veggies, cumin, chili powder, salt, and pepper.
- In a greased baking dish, layer one tortilla at the bottom, followed by half of the filling mixture and a sprinkle of cheese. Repeat with another tortilla, remaining filling, and cheese. Top with one last tortilla and cover with remaining cheese.
- Bake for 25-30 minutes until bubbly and golden brown. Let cool slightly before slicing.
