  • 2 cups butternut squash (cubed)
  • 1 cup pomegranate seeds
  • 4 cups baby spinach
  • 1 cup feta cheese (crumbled)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Toss cubed butternut squash with olive oil, salt, and pepper, then spread on the baking sheet. Roast for 25-30 minutes until tender.
  2. While the squash roasts, wash and dry baby spinach, placing it in a large serving bowl.
  3. Once the squash is done, let it cool slightly before adding it to the spinach along with pomegranate seeds and crumbled feta.
  4. Drizzle with balsamic vinegar and toss gently to combine. Adjust seasoning if needed and serve immediately.
