  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • ¾ cup granulated sugar
  • 2 tsp pure vanilla extract
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tbsp granulated sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C). In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese and sugar until smooth. Mix in sour cream and vanilla. Add eggs one at a time on low speed until fully incorporated.
  3. Pour the filling over the crust and tap gently to remove air bubbles. Bake in a water bath for about 55-60 minutes until slightly jiggly in the center. Cool in the oven for an hour.
  4. Chill in the refrigerator for at least four hours or overnight.
  5. Whip heavy cream until soft peaks form, spread over cheesecake, sprinkle with sugar, and caramelize using a kitchen torch.
