- ¾ cup granulated sugar

- 2 tbsp granulated sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C). In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In another bowl, beat cream cheese and sugar until smooth. Mix in sour cream and vanilla. Add eggs one at a time on low speed until fully incorporated.
- Pour the filling over the crust and tap gently to remove air bubbles. Bake in a water bath for about 55-60 minutes until slightly jiggly in the center. Cool in the oven for an hour.
- Chill in the refrigerator for at least four hours or overnight.
- Whip heavy cream until soft peaks form, spread over cheesecake, sprinkle with sugar, and caramelize using a kitchen torch.
